Blueberry Muffin - makes 10 to 12 muffinsmuffin

This recipe is a classic muffin with a sugar topping.  The topping makes them seem special and a favorite at the bed and breakfast.

Ingredients

 1 3/4 cup flour
1/2 cup sugar
2 tsp. baking powder

3/4 cup milk
1/4 cup vegetable oil
1 beaten egg

3/4 cup blueberries (fresh or frozen)
2 tsp. grated lemon rind

Topping:
1/3 cup melted butter
1 tsp. vanilla
1/3 cup sugar
1/2 tsp. cinnamon

Directions

 Spray-oil coat muffin pan
Set oven to 400

Blend first three ingredients together in a bowl.
Add the second three ingredients all at once, stirring just until it is moistened.
Gently fold in blueberries and lemon rind. Bake for 20 minutes at 400 degrees.

Mix melted butter with vanilla. In separate dish mix sugar and cinnamon. When muffins are slightly cooled dip each muffin top into butter/vanilla mixture, then into the sugar and cinnamon mixture.
Serve warm.
